Instructions

  2. Brown the Beef: Heat olive oil in a large Dutch oven or oven-safe pot over medium-high heat. Add the beef cubes in batches, ensuring not to overcrowd the pot. Overcrowding will steam the beef instead of searing it. Brown the beef on all sides until nicely browned and caramelized, about 2-3 minutes per side. Remove the browned beef from the pot and set aside.
  3. Sauté the Vegetables: Reduce the heat to medium. Add the chopped onions, carrots, and celery to the pot. Sauté the vegetables until they begin to soften and become fragrant, about 5-7 minutes, stirring occasionally. Scrape up any browned bits from the bottom of the pot – these are packed with flavor!
  4. Add Aromatics and Tomato Paste: Stir in the tomato paste, dried thyme, dried rosemary, garlic powder, and onion powder to the vegetables.   5. Deglaze the Pot: Pour in the beef broth, scraping up any remaining browned bits from the bottom of the pot. Add the Worcestershire sauce. Bring the mixture to a simmer.
  6. Return Beef and Add Potatoes: Return the browned beef to the pot. Add the cubed potatoes to the pot, ensuring they are mostly submerged in the liquid. Bring the mixture back to a simmer.
  7. Thicken the Gravy (Optional, for a thicker sauce): In a small bowl, whisk together the all-purpose flour with a few tablespoons of the hot broth from the pot until smooth, creating a slurry. Gradually whisk this slurry back into the simmering casserole. Cook for a few minutes, stirring occasionally, until the gravy thickens slightly.
