Instructions

  1. Prepare the Zucchini: Begin by washing and grating the zucchini using a box grater. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out as much excess moisture as possible. This step is crucial to prevent the frittata bites from becoming watery. Set the squeezed zucchini aside. Removing excess water ensures the frittata bites will bake properly and have a pleasant texture.
  2. Sauté the Aromatics: Heat olive oil in a skillet over medium heat. Add the diced onion and sauté until softened and translucent, about 3-5 minutes. Softening the onion first mellows its flavor and prevents it from being too sharp in the finished frittata bites. Add the minced garlic to the skillet and cook for another minute until fragrant.   4. Mix Thoroughly: Stir all the ingredients together until they are well combined. Ensure that the zucchini and cheeses are evenly distributed throughout the egg mixture. A uniform mixture ensures that each frittata bite will have a consistent flavor and texture.
  5. Prepare the Muffin Tin: Preheat your oven to 375°F (190°C). Lightly grease a 12-cup muffin tin with olive oil or cooking spray. Greasing the muffin tin prevents the frittata bites from sticking and makes them easy to remove after baking. You can also use silicone muffin liners for easy cleanup.
