  • 2 medium English cucumbers (about 12-14 inches long each): These are preferred for their thin skin (no peeling necessary!), fewer seeds, and crisp, mild flavor. They provide the perfect sturdy base for our bites.
  • 3 medium ripe tomatoes (e.g., Roma or vine-ripened): Look for firm yet juicy tomatoes with a vibrant red color. These will be diced small to sit atop the cucumber slices.
  • 1/2 cup fresh mint leaves, finely chopped: This is the star flavor! Fresh mint provides an incomparable cooling and aromatic quality. Do not substitute with dried mint for best results.
  • 1/4 cup red onion, very finely minced (optional but recommended): Adds a subtle pungent kick and beautiful color contrast. Soaking the minced onion in cold water for 10 minutes can mellow its flavor if desired.
  • 2 tablespoons extra virgin olive oil: A good quality olive oil adds richness and helps meld the flavors together.
  • 1 tablespoon fresh lemon juice: Brightens all the flavors and adds a necessary acidic counterpoint.
  • 1/4 teaspoon sea salt, or to taste: Enhances all the other flavors. Adjust based on your preference.
  • 1/8 teaspoon black pepper, freshly ground, or to taste: Adds a gentle warmth.
  • Optional Garnish: Crumbled feta cheese or tiny mozzarella pearls: For an added creamy, salty dimension.

Instructions

  1. Prepare the Cucumbers: Wash the English cucumbers thoroughly. Since their skin is tender, peeling is optional. If you prefer, you can partially peel them by running a fork down the sides to create a decorative striped pattern. Trim off the ends. Slice the cucumbers into rounds, about 1/4 to 1/3 inch thick. You’ll want them sturdy enough to hold the topping without being too chunky. Arrange the cucumber slices in a single layer on a large platter or serving tray.
  2. Prepare the Tomatoes: Wash the tomatoes. Core them and dice them into small, uniform pieces (about 1/4 inch). The goal is to have a neat topping that sits well on the cucumber slices. Place the diced tomatoes in a medium mixing bowl.
  3. Prepare the Aromatics: Finely chop the fresh mint leaves. If using red onion, mince it very finely. Add the chopped mint and minced red onion (if using) to the bowl with the diced tomatoes.
  4. Combine the Topping: To the tomato, mint, and onion mixture, add the extra virgin olive oil and fresh lemon juice. Season with sea salt and freshly ground black pepper. Gently stir everything together until well combined. Taste the mixture and adjust seasoning if necessary – you might want a little more salt, pepper, or lemon juice.
  5. Assemble the Bites: Carefully spoon a small amount of the tomato-mint mixture onto each cucumber slice. Be generous but not so much that it spills over easily. Aim for a nice mound on each slice.
  6. Chill (Optional but Recommended): For the best flavor, cover the platter with plastic wrap and chill the Tomato Cucumber Mint Bites in the refrigerator for at least 15-30 minutes before serving. This allows the flavors to meld and makes the bites even more refreshing.
