Toasted Garlic Chickpea Bites

  • 2 cans (15-ounce each) Chickpeas (Garbanzo Beans): The star of the show! Canned chickpeas offer convenience. Ensure they are rinsed and drained very well. Low-sodium versions are great if you’re watching salt intake.
  • 2 tablespoons Olive Oil: Extra virgin olive oil provides flavour and helps the chickpeas crisp up beautifully during toasting. You can substitute with avocado oil or another high-heat oil if preferred.
  • 45 cloves Garlic, finely minced: Fresh garlic provides the signature pungent, savoury flavour that deepens upon toasting. Adjust the amount based on your love for garlic!
  • 1 teaspoon Smoked Paprika: Adds a lovely reddish hue and a subtle smoky depth that complements the garlic and chickpeas perfectly.
  • 1/2 teaspoon Cumin Powder: Brings a warm, earthy note that grounds the flavours.
  • 1/2 teaspoon Onion Powder: Works synergistically with the garlic for a more rounded savoury profile.
  • 1/2 teaspoon Salt (or to taste): Enhances all the other flavours. Start with 1/2 teaspoon and adjust after tasting, especially if your canned chickpeas weren’t low-sodium.
  • 1/4 teaspoon Black Pepper, freshly ground: Adds a touch of gentle heat and spice. Freshly ground pepper offers the best flavour.
  • (Optional) Pinch of Cayenne Pepper: For those who like a little kick of heat. Add sparingly at first.
  • (Optional) Fresh Parsley or Cilantro, chopped: For garnish after toasting, adding a touch of freshness and colour.

Instructions

  1. Preheat and Prepare: Preheat your oven to 400°F (200°C). Line a large, rimmed baking sheet with parchment paper for easy cleanup and to prevent sticking.
  2. Rinse and THOROUGHLY Dry Chickpeas: This is arguably the most crucial step for achieving maximum crispiness. Open the cans of chickpeas and pour them into a colander. Rinse them thoroughly under cold running water until the water runs clear. Shake the colander vigorously to remove as much excess water as possible.
  3. Dry Them Again (Seriously!): Spread the rinsed chickpeas onto a clean kitchen towel or several layers of paper towels. Gently pat them dry with another towel or more paper towels. Roll them around a bit. The drier the chickpeas are before adding oil and seasonings, the crispier they will become when toasted. Let them air dry for a few minutes on the towel if you have time. Remove any loose skins that come off during drying, though it’s not essential to remove all of them.
  4. Season the Chickpeas: Transfer the thoroughly dried chickpeas to a medium-sized mixing bowl. Drizzle the olive oil over the chickpeas. Add the minced garlic, smoked paprika, cumin powder, onion powder, salt, black pepper, and cayenne pepper (if using).
  5. Toss to Coat: Use a spoon or spatula (or your clean hands!) to toss the chickpeas gently but thoroughly, ensuring each chickpea is evenly coated with the oil and spices. Make sure the minced garlic is well distributed.
  6. Spread onto Baking Sheet: Pour the seasoned chickpeas onto the prepared baking sheet. Spread them out into a single, even layer. It’s important not to overcrowd the pan; if the chickpeas are piled on top of each other, they will steam rather than toast and won’t get crispy. Use two baking sheets if necessary.
  7. Toast in the Oven: Place the baking sheet in the preheated oven. Toast for 20-30 minutes. About halfway through the cooking time (around the 10-15 minute mark), give the baking sheet a good shake or use a spatula to stir the chickpeas around. This helps them cook evenly and prevents sticking.
  8. Check for Doneness: Continue toasting until the chickpeas are golden brown, slightly shrunken, and feel dry and firm to the touch. They should be crispy on the outside. Taste one (carefully, it will be hot!) to check for crispiness. If you prefer them extra crispy, you can leave them in for another 5-10 minutes, keeping a close eye on them to prevent burning, especially the garlic bits.
  9. Cool Slightly and Serve: Once toasted to your liking, remove the baking sheet from the oven. Let the chickpea bites cool on the baking sheet for a few minutes. They will continue to crisp up slightly as they cool. If desired, sprinkle with freshly chopped parsley or cilantro just before serving. Serve warm or at room temperature.
