Step 1: Prepare the Shrimp

  1. Rinse and Pat Dry:
    • Rinse the shrimp under cold water and pat them dry with paper towels.
  2. Season the Shrimp:
    • In a mixing bowl, season the shrimp with a pinch of salt, pepper, and a tablespoon of soy sauce. Set aside to marinate while you prepare the vegetables.

Step 2: Cook the Vegetables

  1. Heat the Oil:
    • In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat.
  2. Sauté the Aromatics:
    • Add the minced garlic and sliced onion to the skillet. Sauté for 1-2 minutes until fragrant.
  3. Add Bell Peppers:
    • Add the sliced red and green bell peppers. Stir-fry for another 3-4 minutes until they start to soften.
  4. Toss in Pineapple:
    • Add the pineapple chunks to the skillet and stir-fry for an additional 2 minutes.

Step 3: Cook the Shrimp

  1. Remove Vegetables:
    • Transfer the sautéed vegetables and pineapple to a plate and set aside.
  2. Cook the Shrimp:
    • In the same skillet, add the remaining tablespoon of oil. Add the shrimp and cook for 2-3 minutes on each side until pink and opaque.

Step 4: Combine and Finish

  1. Return Vegetables:
    • Return the vegetables and pineapple to the skillet with the shrimp.
  2. Mix the Sauce:
    • In a small bowl, whisk together the remaining soy sauce, fish sauce, oyster sauce, sriracha, rice vinegar, and honey.
  3. Pour the Sauce:
    • Pour the sauce mixture over the shrimp and vegetables. Stir well to coat everything evenly.
  4. Cook Until Heated:
    • Cook for another 2-3 minutes until everything is heated through and the sauce has slightly thickened.

Step 5: Garnish and Serve

  1. Garnish:
    • Remove from heat and sprinkle with chopped green onions, sesame seeds, and fresh cilantro leaves.
  2. Serve:
    • Serve hot with lime wedges on the side for an extra burst of flavor.
