- 4 Slices Thick-Cut Artisan Bread: (Approx. 1-inch thick) Choose a sturdy bread like sourdough, ciabatta, or a good country loaf that can hold the toppings well and provides a satisfying chew.
- 1 cup (about 250g) Whole Milk Ricotta Cheese: Opt for good quality, fresh whole milk ricotta for the creamiest texture and richest flavour. Drain any excess whey if it looks watery.
- 2–4 Tablespoons Honey (or Maple Syrup): Use runny honey for easy drizzling. The amount depends on your desired sweetness level. Maple syrup or agave nectar are great alternatives.
- 1 cup Fresh Berries (Mixed or Single Type): Such as strawberries (sliced), blueberries, raspberries, or blackberries. They add freshness, colour, and a lovely tart contrast.
- Optional Garnishes:
- 1 Tablespoon Chopped Nuts: (e.g., pistachios, walnuts, almonds) For added crunch and nutty flavour.
- 1 Teaspoon Zest: (e.g., Lemon or Orange) For a bright, aromatic lift.
- Pinch of Flaky Sea Salt: Enhances the sweetness and adds complexity.
- Fresh Mint Leaves: For colour and a hint of freshness.
- Sprinkle of Cinnamon or Cardamom: For a warm spice note.
Instructions
- Prepare the Ricotta (Optional but Recommended): If your ricotta seems watery, you can improve its texture. Line a fine-mesh sieve with cheesecloth (or a sturdy paper towel) and place it over a bowl. Spoon the ricotta into the sieve and let it drain for about 15-30 minutes in the refrigerator to remove excess whey. This step results in a thicker, creamier spread. Discard the drained liquid. You can stir in a pinch of salt or a teaspoon of vanilla extract into the ricotta at this stage if desired.
- Toast the Bread: Toast the bread slices until they are golden brown and crisp. You can use a toaster, a toaster oven, or place them on a baking sheet under the broiler (watch carefully to prevent burning!). Alternatively, grill the bread on a grill pan with a touch of olive oil for smoky flavour and nice char marks. The goal is a firm base that won’t get soggy immediately under the ricotta.
- Assemble the Toasts: Once the bread is toasted, let it cool slightly for a minute so it doesn’t completely melt the ricotta on contact, but is still warm. Generously spread about 1/4 cup of the drained ricotta cheese evenly over each slice of toast, reaching close to the edges.
- Add Toppings: Arrange your chosen fresh berries attractively over the ricotta spread. Be generous!
- Drizzle and Garnish: Drizzle the honey (or maple syrup/agave) evenly over the berries and ricotta. Start with about 1/2 to 1 tablespoon per toast and add more if needed.
- Final Touches (Optional): If using, sprinkle with chopped nuts, citrus zest, flaky sea salt, cinnamon/cardamom, or garnish with fresh mint leaves just before serving.
- Serve Immediately: Sweet Ricotta Toasts are best enjoyed immediately while the toast is still crisp and warm, and the ricotta is cool and creamy.
