Ingredients

Scale

To make delicious Swedish Cabbage Rolls with Lingonberry Sauce, you will need the following ingredients:

For the Cabbage Rolls:

  • 1 large head of cabbage
  • 1 pound ground beef or pork
  • 1 cup cooked rice
  • 1 onion, finely chopped
  • 1 egg, beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon allspice
  • 2 tablespoons butter
  • 1 cup beef broth

For the Lingonberry Sauce:

  • 1 cup lingonberry preserves
  • 1/2 cup water
  • 1 tablespoon sugar (optional)
  • 1 tablespoon lemon juice

Instructions

Preparing the Cabbage Rolls

  1. Prep the Cabbage:
Begin by removing the core from the cabbage. Boil a large pot of water and blanch the cabbage head for about 5 minutes until the leaves are pliable. Carefully peel off each leaf and set them aside to cool.
  2. Make the Filling:
In a large bowl, combine the ground meat, cooked rice, chopped onion, beaten egg, salt, pepper, and allspice. Mix well until all ingredients are thoroughly combined.
  3. Fill the Cabbage Leaves:
Lay a cabbage leaf flat on a clean surface. Place about 2 tablespoons of the meat mixture at the base of the leaf. Fold in the sides and roll up tightly, securing with a toothpick if necessary. Repeat with the remaining leaves and filling.
  4. Preheat the Oven:
Preheat your oven to 350°F (175°C).
  5. Brown the Rolls:
In a large skillet, melt the butter over medium heat. Add the cabbage rolls and brown them on all sides, about 8-10 minutes.
  6. Bake the Rolls:
Transfer the browned rolls to a baking dish. Pour the beef broth over the rolls and cover the dish with foil. Bake in the preheated oven for 1 hour, until the cabbage is tender and the filling is cooked through.

Preparing the Lingonberry Sauce

  1. Make the Sauce:
In a small saucepan, combine the lingonberry preserves, water, sugar (if using), and lemon juice. Cook over medium heat until the sauce thickens slightly, about 5-6 minutes. Stir occasionally to prevent sticking.
