Ingredients
Scale
Before you start cooking, gather the following ingredients for your Spicy Argentinian Chorizo Rice Bake:
- 1 cup of long-grain white rice
- 2 tablespoons of olive oil
- 1 medium onion, chopped
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 teaspoon of smoked paprika
- 1 teaspoon of cumin
- 1/2 teaspoon of chili flakes (adjust to your heat preference)
- 8 ounces (225 grams) of Argentinian chorizo, sliced
- 1 can (14 ounces) of diced tomatoes, drained
- 2 cups of chicken or vegetable broth
- Salt and pepper to taste
- 1/4 cup of chopped fresh cilantro
- Juice of 1 lime
- Optional: 1 cup of shredded cheese (such as Monterey Jack or cheddar)
Instructions
Follow these step-by-step instructions to create your Spicy Argentinian Chorizo Rice Bake:
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare the Ingredients: Rinse the rice under cold water until the water runs clear. This helps remove excess starch and prevents the rice from becoming sticky.
- Sauté the Aromatics: In a large oven-safe skillet or casserole dish, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 30 seconds.
- Add the Vegetables: Add the diced red and green bell peppers to the skillet. Sauté for 5-6 minutes, or until the peppers begin to soften.
- Spice it Up: Sprinkle the smoked paprika, cumin, and chili flakes over the vegetables. Stir well to coat everything evenly with the spices.
- Cook the Chorizo: Add the sliced Argentinian chorizo to the skillet. Cook for 4-5 minutes, allowing the chorizo to release its flavorful oils and start to brown.
- Combine with Rice and Tomatoes: Stir in the rinsed rice and drained diced tomatoes. Mix everything thoroughly to ensure the rice is well-coated with the spices and chorizo oils.
- Add Broth and Season: Pour in the chicken or vegetable broth, and season with salt and pepper to taste. Stir to combine all the ingredients evenly.
- Bake the Rice: Cover the skillet or casserole dish with a lid or aluminum foil. Transfer it to the preheated oven and bake for 25-30 minutes, or until the rice is tender and has absorbed the liquid.
- Garnish and Serve: Once the rice is cooked, remove the dish from the oven. Stir in the chopped cilantro and lime juice. If desired, sprinkle with shredded cheese and return to the oven for a few minutes until the cheese is melted and bubbly.
