  • 1 (16.5 oz) roll Refrigerated Sugar Cookie Dough: The convenient base for our pizza, providing a sweet, chewy crust. You can also use your favourite homemade sugar cookie recipe.
  • 8 oz Cream Cheese, softened: The tangy, creamy heart of the frosting. Ensure it’s properly softened for smooth mixing.
  • 1/2 cup Powdered Sugar (Confectioners’ Sugar): Sweetens the cream cheese frosting and gives it structure. Sift if lumpy.
  • 1 tsp Vanilla Extract: Adds warmth and depth to the frosting flavour.
  • Assorted Fresh Fruit (approx. 3-4 cups total), for the rainbow: This is where the magic happens! Choose vibrant fruits, washed, dried, and prepped (hulled, sliced, segmented, etc.).
    • Red: Strawberries (sliced or halved), Raspberries
    • Orange: Mandarin Orange Segments (canned, drained well, or fresh clementines), Fresh Apricot slices, Peach slices, Mango chunks
    • Yellow: Pineapple Tidbits (drained well if canned), Banana slices (add just before serving or toss in lemon juice), Starfruit slices
    • Green: Kiwi slices (peeled), Green Grapes (halved)
    • Blue: Blueberries
    • Purple/Indigo: Blackberries, Red Seedless Grapes (halved), halved Plums
  • Optional Glaze: 2 tbsp Apricot Preserves or Apple Jelly: Mixed with a teaspoon of water and warmed, this adds shine and helps prevent fruit from drying out or browning quickly.

Instructions

  1. Prepare the Crust: Preheat your oven according to the directions on the sugar cookie dough package (usually around 350°F or 175°C). Grease a 12-inch round pizza pan or line it with parchment paper for easy removal. Press the sugar cookie dough evenly onto the bottom of the prepared pan, forming a large round cookie crust. You can lightly flour your hands or a rolling pin to help spread it evenly.
  2. Bake the Crust: Bake the cookie crust for the time specified on the package, typically 12-18 minutes, or until the edges are golden brown and the center is set. Keep a close eye on it to prevent over-baking; you want it slightly soft in the center as it will firm up upon cooling.
  3. Cool Completely: This step is crucial! Remove the crust from the oven and let it cool in the pan on a wire rack for about 10-15 minutes. Then, carefully transfer the crust (if possible, or leave it in the pan) to the wire rack to cool completely. This can take at least 30-60 minutes. Applying frosting to a warm crust will cause it to melt and become runny.
  4. Prepare the Frosting: While the crust cools, prepare the cream cheese frosting. In a medium bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Using an electric mixer (or a sturdy whisk and some elbow grease), beat the ingredients together until smooth, creamy, and well combined. Scrape down the sides of the bowl as needed.
  5. Assemble the Pizza Base: Once the cookie crust is completely cool, spread the cream cheese frosting evenly over the surface, leaving a small border around the edge, just like a traditional pizza sauce.
  6. Arrange the Fruit: Now for the fun part! Starting from the outer edge or the center, arrange your prepared fresh fruit in concentric circles, following the colours of the rainbow (Red, Orange, Yellow, Green, Blue, Purple/Indigo). Pat the fruit dry gently with paper towels before placing it on the frosting to minimize excess moisture. Get creative with your design!
  7. Apply Optional Glaze: If using the glaze, gently warm the apricot preserves or apple jelly with 1 teaspoon of water in a small saucepan or microwave until just melted and easily brushable. Using a pastry brush, lightly dab or brush the glaze over the arranged fruit. This adds a beautiful shine and helps preserve the fruit’s freshness.
  8. Chill: Carefully cover the fruit pizza with plastic wrap (you can insert toothpicks around the edges to prevent the wrap from sticking to the fruit) or place it in an airtight container. Refrigerate for at least 30-60 minutes before serving. This allows the frosting to set further and the flavours to meld.
  9. Slice and Serve: Once chilled, use a sharp knife or a pizza cutter to slice the Rainbow Fruit Pizza into wedges. Serve immediately and enjoy the vibrant colours and delicious taste!
