Peel the skin off the papaya halves using a sharp knife or vegetable peeler. Once peeled, cut the papaya into bite-sized cubes, approximately ½ inch to ¾ inch in size. Aim for uniform cubes for even flavor distribution and visual appeal. Place the cubed papaya in a medium-sized mixing bowl.
- Prepare the Red Onion and Mint: Peel and finely dice the red onion. The finer the dice, the less overpowering the onion flavor will be in the salad. Wash the fresh mint leaves thoroughly and pat them dry with a paper towel or salad spinner. Stack the mint leaves together and roll them up tightly like a cigar.
