Mini Cucumber Sandwiches

  • Author: Jessica

Ingredients

  • English Cucumber: 1 large, long variety with thin skin and fewer seeds. Provides the crisp, refreshing core of the sandwich.
  • Cream Cheese: 8 ounces, softened. Forms the creamy, flavorful base that binds the sandwich together. Full-fat cream cheese offers the richest flavor and texture.
  • Fresh Dill: 2 tablespoons, finely chopped. Lends a bright, herbaceous note that complements the cucumber and cream cheese beautifully.
  • Fresh Chives: 2 tablespoons, finely chopped. Adds a delicate onion-like flavor and visual appeal with its vibrant green color.
  • Lemon Juice: 1 teaspoon, freshly squeezed. Enhances the flavors and adds a touch of acidity to balance the richness of the cream cheese.
  • Salt: 1/4 teaspoon, or to taste. Seasoning that brings out the flavors of all the ingredients.
  • Black Pepper: 1/8 teaspoon, freshly ground, or to taste. Adds a subtle warmth and depth of flavor.
  • White Bread: 1 loaf, soft, sliced white bread. The classic choice for cucumber sandwiches, providing a delicate, neutral base. Crusts removed for refined presentation.
  • Butter (Optional): Softened, for spreading on the bread. Adds extra richness and prevents the bread from becoming soggy, especially if preparing in advance.

Instructions

  1. Prepare the Cucumber: Wash the English cucumber thoroughly. There’s no need to peel it as the skin is thin and tender. Slice the cucumber into very thin rounds, about 1/8 inch thick. You can use a mandoline for perfectly even slices, or a sharp knife. Lay the cucumber slices on a paper towel-lined plate and lightly sprinkle them with salt. This step helps to draw out excess moisture from the cucumber, preventing the sandwiches from becoming soggy. Let them sit for about 10-15 minutes while you prepare the cream cheese mixture. Gently pat the cucumber slices dry with another paper towel before assembling the sandwiches.
  2. Make the Cream Cheese Spread: In a medium bowl, combine the softened cream cheese, finely chopped fresh dill, and finely chopped fresh chives. Ensure the cream cheese is truly softened to room temperature for easy mixing and a smooth, lump-free spread. Add the freshly squeezed lemon juice, salt, and freshly ground black pepper. Mix all the ingredients together thoroughly until they are well combined and the mixture is creamy and uniform in texture. Taste the cream cheese spread and adjust the seasoning as needed, adding more salt, pepper, or lemon juice to your preference.
  3. Prepare the Bread: Lay out the slices of white bread on a clean work surface. Using a sharp serrated knife, carefully remove the crusts from all sides of each bread slice. Removing the crusts gives the sandwiches a more refined and delicate appearance, typical of tea sandwiches. If desired, lightly butter each slice of bread with softened butter. This is an optional step that adds a layer of richness and helps to prevent the bread from becoming soggy, particularly if you are preparing the sandwiches ahead of time.
  4. Assemble the Sandwiches: Spread a generous layer of the prepared cream cheese mixture evenly over one slice of bread. Be generous with the cream cheese – it’s a key flavor component of the sandwich. Arrange the thinly sliced cucumber rounds in a single layer over the cream cheese spread, overlapping them slightly for full coverage and visual appeal. Place a second slice of bread on top of the cucumber slices, gently pressing down to create a sandwich.
  5. Cut into Mini Sandwiches: Once assembled, you need to cut the sandwiches into smaller, bite-sized portions. For classic mini cucumber sandwiches, cut each sandwich into four equal squares. You can achieve this by first cutting the sandwich in half diagonally, and then cutting each triangle in half again. Alternatively, you can cut each sandwich into four rectangles by cutting it in half lengthwise and then in half crosswise. Use a sharp knife and a gentle sawing motion to avoid tearing the bread and to ensure clean cuts.
  6. Serve and Enjoy: Arrange the mini cucumber sandwiches on a serving platter. Garnish with extra sprigs of fresh dill or chives, if desired, for an added touch of freshness and visual appeal. Serve immediately for the best texture and flavor. If you are not serving them right away, see the “Additional Tips” section for make-ahead and storage instructions. Enjoy these refreshing and elegant mini cucumber sandwiches as a delightful appetizer, snack, or part of a tea party spread!
