- Prepare the Spinach: The single most important step for a perfect dip is removing all excess water from the spinach. Gather the edges and twist, squeezing as hard as you can until no more liquid comes out. You’ll be surprised how much water is released. Your 10-ounce block of spinach should reduce to a small, dense ball. Set aside.
- Combine the Base Ingredients: In a large, microwave-safe bowl, place the softened block of cream cheese. Use a spatula or a wooden spoon to break it up and smooth it out. Add the sour cream and mayonnaise to the bowl. Stir everything together until the mixture is smooth, well-combined, and free of any large lumps of cream cheese.
