  • Couscous (1 cup)

  • Fresh dill (2 tablespoons, chopped)
  • Cherry tomatoes (1 cup, halved)
  • Cucumber (1, diced)
  • Red onion (1/4 cup, finely chopped)
  • Feta cheese (1/2 cup, crumbled)
  • Salt and pepper (to taste)
  • Chicken or vegetable broth (1 1/4 cups)
  • Paprika (1 teaspoon)
  • Red pepper flakes (optional, for a bit of heat)

Instructions

Follow these steps to create a delicious Mediterranean Shrimp and Couscous dish:

Step 1: Prepare the Couscous

  1. In a medium saucepan, bring the chicken or vegetable broth to a boil.
  2. Add the couscous to the boiling broth, stir, cover, and remove from heat.
  3. Let the couscous sit for about 5 minutes, or until it’s absorbed all the liquid.
  4. Fluff the couscous with a fork and set aside.

Step 2: Cook the Shrimp

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  2. Add the minced garlic and sauté for about 1 minute, until fragrant.
  3. Add the shrimp to the skillet and season with salt, pepper, paprika, and red pepper flakes (if using).
  4. Cook the shrimp for 2-3 minutes on each side until they are pink and opaque.
  5. Remove the shrimp from the skillet and set aside.

Step 3: Assemble the Dish

  1. In the same skillet, add the remaining tablespoon of olive oil.
  2. Add the cherry tomatoes, cucumber, and red onion, and sauté for 2-3 minutes until slightly softened.
  3. Return the cooked shrimp to the skillet, along with the cooked couscous.
  4. Add the lemon juice, fresh parsley, and dill to the mixture.
  5. Stir everything together until well combined and heated through.
  6. Remove from heat and sprinkle with crumbled feta cheese.
