Instructions

Follow these simple steps to create your delicious Mashed Sweet Potato Toast.

1. Cook the Sweet Potatoes:
Roasting (Recommended for deeper flavor):
* Preheat your oven to 400°F (200°C).
* Wash and scrub the sweet potatoes thoroughly. Pat them dry.
* Prick the sweet potatoes several times with a fork. This allows steam to escape and prevents them from bursting.
* You can either roast them whole directly on the oven rack (place a baking sheet underneath to catch any drips) or slice them in half lengthwise and place them cut-side down on a parchment-lined baking sheet.
* Roast for 40-60 minutes, or until they are very tender and easily pierced with a fork. The cooking time will vary depending on the size of your sweet potatoes.
* Once cooked, let them cool slightly until you can handle them.
Boiling/Steaming (Quicker method):
* Peel the sweet potatoes and cut them into 1-inch cubes.

* Alternatively, steam the cubes in a steamer basket over boiling water for about 15-20 minutes until tender.

* Using a potato masher, fork, or an electric hand mixer (for an extra smooth texture), mash the sweet potatoes until smooth and creamy. Taste and adjust seasonings if needed – you might want a little more maple syrup for sweetness or an extra dash of cinnamon.

3. Toast the Bread:
* While the sweet potatoes are cooking or mashing, toast your bread slices to your desired level of crispness. You can use a toaster, a toaster oven, or even grill them on a pan for a smoky flavor. A good, sturdy toast is key to holding up the creamy sweet potato topping.
