Follow these simple steps to create your delicious lettuce-wrapped veggie mix:
- Prepare the Lettuce: Carefully separate the lettuce leaves. Wash them thoroughly under cold running water and pat them dry gently with paper towels or use a salad spinner. Set aside. The goal is to have cup-shaped leaves.
- Sauté Aromatics: Heat the olive oil (or sesame oil) in a large skillet or wok over medium-high heat. Add the sliced red onion and cook for 2-3 minutes until softened.
- Add Garlic and Ginger: Stir in the minced garlic and grated ginger. Cook for another minute until fragrant, being careful not to burn the garlic.
- Cook “Harder” Vegetables: Add the julienned bell peppers and carrots to the skillet. Stir-fry for 3-5 minutes until they are tender-crisp. You want them slightly softened but still retaining a bit of a crunch.
- Incorporate Mushrooms and Cabbage: Add the sliced mushrooms and shredded purple cabbage. Cook for another 3-4 minutes, stirring occasionally, until the mushrooms are tender and the cabbage has wilted slightly.
