Follow these steps to prepare your herb-filled Khobz flatbread:

Preparing the Dough

  1. Activate the Yeast: In a small bowl, combine the warm water and sugar. Sprinkle the yeast over the top and let it sit for about 5 minutes until it becomes frothy.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, whole wheat flour, and salt.

Kneading and Rising

Shaping and Baking

  2. Shape the Flatbreads: Roll each portion into a ball, then flatten it into a disc about ¼ inch thick.
  3. Final Rise: Place the discs on a baking sheet lined with parchment paper. Cover and let them rest for another 30 minutes.
  4. Prepare for Baking: Preheat the oven to 450°F (230°C). Optionally, sprinkle sesame and nigella seeds on top of each flatbread for added flavor and texture.
