Ingredients
Scale
For the Fritters:
- 2 medium zucchinis, grated
- 1/2 cup all-purpose flour (or chickpea flour)
- 1/2 cup feta cheese, crumbled
- 2 large eggs
- 1/4 cup fresh dill, chopped
- Salt and pepper, to taste
- Olive oil, for frying
For the Tzatziki:
- 1 cup plain yogurt (Greek or regular)
- 1 medium cucumber, grated and drained
- 1 clove garlic, minced
- 1 tbsp lemon juice
- Salt, to taste
Instructions
Prepare the Zucchini:
- Grate the Zucchinis: Begin by grating the zucchinis using a box grater or food processor.
- Remove Excess Moisture: Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial to ensure your fritters are crispy and not soggy.
Mix the Ingredients:
- Combine Ingredients: In a large mixing bowl, combine the grated zucchini, flour, crumbled feta cheese, eggs, chopped dill, salt, and pepper. Mix well until all the ingredients are evenly incorporated.
Form the Fritters:
- Shape the Mixture: Take small portions of the mixture and form them into patties. Aim for uniform size to ensure even cooking.
Cook the Fritters:
- Heat the Oil: In a non-stick frying pan, heat a generous amount of olive oil over medium heat.
- Fry the Fritters: Place the patties in the pan, being careful not to overcrowd. Fry for about 3-4 minutes on each side, or until they are golden brown and crispy.
Make the Tzatziki:
- Combine Ingredients: In a separate bowl, mix together the plain yogurt, grated and drained cucumber, minced garlic, lemon juice, and a pinch of salt. Stir until well combined.
Serve:
- Enjoy Warm: Serve the fritters warm with a side of the refreshing Tzatziki sauce for dipping or drizzling.
