Greek Zucchini Fritters with Tzatziki

  • Author: Sarah

Ingredients

Scale

For the Fritters:

  • 2 medium zucchinis, grated
  • 1/2 cup all-purpose flour (or chickpea flour)
  • 1/2 cup feta cheese, crumbled
  • 2 large eggs
  • 1/4 cup fresh dill, chopped
  • Salt and pepper, to taste
  • Olive oil, for frying

For the Tzatziki:

  • 1 cup plain yogurt (Greek or regular)
  • 1 medium cucumber, grated and drained
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • Salt, to taste

Instructions

Prepare the Zucchini:

  1. Grate the Zucchinis: Begin by grating the zucchinis using a box grater or food processor.
  2. Remove Excess Moisture: Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial to ensure your fritters are crispy and not soggy.

Mix the Ingredients:

  1. Combine Ingredients: In a large mixing bowl, combine the grated zucchini, flour, crumbled feta cheese, eggs, chopped dill, salt, and pepper. Mix well until all the ingredients are evenly incorporated.

Form the Fritters:

  1. Shape the Mixture: Take small portions of the mixture and form them into patties. Aim for uniform size to ensure even cooking.

Cook the Fritters:

  1. Heat the Oil: In a non-stick frying pan, heat a generous amount of olive oil over medium heat.
  2. Fry the Fritters: Place the patties in the pan, being careful not to overcrowd. Fry for about 3-4 minutes on each side, or until they are golden brown and crispy.

Make the Tzatziki:

  1. Combine Ingredients: In a separate bowl, mix together the plain yogurt, grated and drained cucumber, minced garlic, lemon juice, and a pinch of salt. Stir until well combined.

Serve:

  1. Enjoy Warm: Serve the fritters warm with a side of the refreshing Tzatziki sauce for dipping or drizzling.
