  • 3 tablespoons butter
  • 1 apple (peeled, cored, and sliced)
  • 1/2 teaspoon cinnamon
  • 4 to 5 tablespoons sugar (divided)
  • 1 teaspoon lemon zest
  • 3 eggs
  • 2/3 cup milk (room temperature, almond or oat milk for a dairy-free option)
  • 2/3 cup flour
  • 1/8 teaspoon salt

Instructions

Follow these simple steps to create your own German Apple Pancakes:

  1. Preheat your oven to 450°F (230°C). Place the butter in a 10-inch ovenproof skillet and let it melt in the oven. Keep a close eye on it to ensure it doesn’t burn.
  2. Prepare the apples by removing the skillet from the oven. Add the sliced apple, 2 tablespoons of sugar, and cinnamon. Stir to combine, then return the skillet to the oven.
  3. Blend the batter by combining the remaining 2 to 3 tablespoons of sugar, lemon zest, and eggs in a blender. Blend on high for 1 minute.
  4. Incorporate the milk into the egg mixture and blend again. Then, add the flour and salt, blending until the batter is smooth.
  5. Combine and bake by pouring the batter over the apples in the skillet. Bake for 15 to 20 minutes or until the pancake is puffed and set.
