Follow these simple steps to create your own German Apple Pancakes:
- Preheat your oven to 450°F (230°C). Place the butter in a 10-inch ovenproof skillet and let it melt in the oven. Keep a close eye on it to ensure it doesn’t burn.
- Prepare the apples by removing the skillet from the oven. Add the sliced apple, 2 tablespoons of sugar, and cinnamon. Stir to combine, then return the skillet to the oven.
- Blend the batter by combining the remaining 2 to 3 tablespoons of sugar, lemon zest, and eggs in a blender. Blend on high for 1 minute.
- Incorporate the milk into the egg mixture and blend again. Then, add the flour and salt, blending until the batter is smooth.
- Combine and bake by pouring the batter over the apples in the skillet. Bake for 15 to 20 minutes or until the pancake is puffed and set.
