Fruity Ice Pop Sticks

  • Author: Jessica

Ingredients

  • Strawberries: Fresh or frozen, these vibrant red berries bring a classic sweetness and beautiful color to your ice pops. Rich in Vitamin C and antioxidants, they are a healthy and delicious base.
  • Blueberries: Small but mighty, blueberries are packed with antioxidants and offer a slightly tart and juicy burst of flavor. Fresh or frozen both work wonderfully, adding a deep blue hue to your pops.
  • Mango: Fresh or frozen chunks of mango provide a tropical sweetness and a creamy texture when blended. Mangoes are a great source of Vitamin A and fiber, adding nutritional value and exotic flavor.
  • Pineapple: Fresh or canned pineapple chunks (in juice, not syrup) bring a tangy sweetness and tropical zest to the mix. Pineapple also contains bromelain, an enzyme known for its anti-inflammatory properties.
  • Orange Juice: Freshly squeezed or 100% pure orange juice acts as the liquid base, adding natural sweetness and a citrusy tang. It also helps blend the fruits smoothly and provides Vitamin C.
  • Lemon Juice: A squeeze of fresh lemon juice enhances the flavors of the fruits and adds a touch of acidity to balance the sweetness. It also helps to prevent browning of some fruits like bananas and apples if used.
  • Honey or Maple Syrup (Optional): For those who prefer a sweeter ice pop, a drizzle of honey or maple syrup can be added. These natural sweeteners are preferable to refined sugar and add a subtle depth of flavor. (Note: For babies under one year old, avoid honey).
  • Water or Coconut Water (Optional): To adjust consistency and create a lighter ice pop, you can add a splash of water or coconut water. Coconut water also adds electrolytes, making these pops even more refreshing and hydrating.
  • Fresh Mint or Basil (Optional): A few fresh mint or basil leaves can be blended in for an extra layer of flavor complexity and a refreshing herbal note. These add a gourmet touch and complement the fruit flavors beautifully.

Instructions

Making these Fruity Ice Pop Sticks is incredibly easy and fun, even for beginner cooks. Follow these simple step-by-step instructions to create your own batch of refreshing frozen treats:

Step 1: Prepare Your Fruits

Begin by washing all your fresh fruits thoroughly under cool running water. For strawberries, remove the green stems. If using larger fruits like mango and pineapple, you will need to peel them and cut them into chunks that are roughly uniform in size. Aim for pieces that are about 1-2 inches in size, making them easier to blend and fit into your ice pop molds. If you are using frozen fruits, you can use them directly from the freezer – no need to thaw. Frozen fruits can actually help create a thicker, smoother texture in your ice pops.

Step 2: Combine Ingredients in a Blender

Transfer all your prepared fruit chunks into a high-speed blender. Pour in the orange juice and lemon juice. If you are opting to use a sweetener, now is the time to add a drizzle of honey or maple syrup. Start with a small amount, about 1-2 tablespoons, and you can always add more to taste later. If you are using fresh herbs like mint or basil, add a few leaves now. For a smoother blend, especially if you’re using a less powerful blender, you might want to add a splash of water or coconut water at this stage. This will help the ingredients blend more easily.

Step 3: Blend Until Smooth

Secure the lid on your blender and blend the mixture until it is completely smooth and creamy. Blend for about 1-2 minutes, or until you no longer see any chunks of fruit. Stop blending occasionally and scrape down the sides of the blender jar with a spatula to ensure all the ingredients are fully incorporated. The consistency should be pourable but not too watery – think of a thick smoothie. If the mixture seems too thick, add a little more orange juice or water, one tablespoon at a time, and blend again until you reach the desired consistency.

Step 4: Taste and Adjust Sweetness

Once blended, take a small spoonful of the mixture and taste it. This is the perfect opportunity to adjust the sweetness to your liking. If you prefer a sweeter ice pop, add a little more honey or maple syrup, blend again briefly, and taste again. Remember that the sweetness will be slightly less pronounced once the mixture is frozen, so it’s okay if it tastes just a touch sweeter than you want the final ice pop to be.

Step 5: Pour into Ice Pop Molds

Carefully pour the blended fruit mixture into your ice pop molds. Leave a little bit of space at the top of each mold to allow for expansion as the pops freeze. If your molds have lids with built-in sticks, insert the sticks now. If you are using molds without lids, you can cover the molds tightly with aluminum foil or plastic wrap and then insert wooden ice pop sticks through the center of each mold after the pops have partially frozen for about 1-2 hours. This will help the sticks stand upright and prevent them from sinking to the bottom.

Step 6: Freeze Until Solid

Place the filled ice pop molds in the freezer and freeze for at least 4-6 hours, or preferably overnight, to ensure they are completely solid. The freezing time will depend on the size and material of your molds and the temperature of your freezer. To check if the ice pops are ready, gently try to wiggle a stick. If it feels firmly set, they are ready to enjoy.

Step 7: Unmold and Enjoy!

Once the ice pops are fully frozen, it’s time to unmold them. Run the molds briefly under warm water for a few seconds to loosen the ice pops. Be careful not to let the water get too hot, or you might start melting the pops. Gently pull on the sticks to remove the ice pops from the molds. If they are still sticking, run them under warm water for a few more seconds. Once unmolded, they are ready to be enjoyed immediately! Serve them up and watch the smiles spread across faces as everyone savors these delicious and refreshing homemade Fruity Ice Pop Sticks. Store any leftover ice pops in an airtight container or freezer bags in the freezer for up to a month.
