Easy Peanut Butter Buckeyes Recipe

  • Author: Sarah

Ingredients

Scale

To create these delectable treats, you’ll need just five simple ingredients. Here’s what you’ll need:

  • 1 cup creamy peanut butter
  • 1/2 cup butter, softened
  • 2 cups powdered sugar
  • 2 cups chocolate chips (dark or milk)
  • 1 tbsp coconut oil (for melting chocolate)

Instructions

Creating these no-bake treats is straightforward and requires minimal kitchen equipment. Follow these simple steps to make your own peanut butter buckeyes:

  1. Mix the Peanut Butter and Butter:
In a large bowl, combine the creamy peanut butter and softened butter. Stir the mixture until it becomes smooth and creamy.
  2. Add the Powdered Sugar:
Gradually add the powdered sugar to the peanut butter mixture. Continue mixing until the ingredients are fully combined and form a dough-like consistency.
  3. Form the Buckeye Balls:
Roll the mixture into 1-inch balls using your hands. Place each ball onto a baking sheet lined with parchment paper. If the mixture is too sticky, lightly dust your hands with powdered sugar.
  4. Freeze the Peanut Butter Balls:
Place the baking sheet with the peanut butter balls in the freezer for about 30 minutes. This will help them firm up, making them easier to dip in chocolate.
  5. Melt the Chocolate:
In a microwave-safe bowl, combine the chocolate chips and coconut oil. Melt the mixture in 30-second intervals, stirring between each interval until the chocolate is smooth and fully melted.
  6. Dip the Peanut Butter Balls:
Using a toothpick, spear each peanut butter ball and dip it about 2/3 of the way into the melted chocolate. Leave a small circle of peanut butter exposed at the top for the signature buckeye look.
  7. Refrigerate the Buckeyes:
Place the dipped buckeyes back onto the baking sheet. Refrigerate them until the chocolate hardens, which should take around 15-20 minutes.
