Instructions

Follow these simple steps to create perfectly golden and delicious churro bites every time. Don’t be intimidated – this recipe is designed to be easy and fun!

  1. Combine Water, Butter, Sugar, and Salt: In a medium saucepan, combine the water, butter, sugar, and salt. Place the saucepan over medium heat and bring the mixture to a boil. Stir occasionally to help the sugar and salt dissolve and the butter melt evenly into the water. You’ll know it’s ready when the butter is fully melted and the mixture is gently bubbling around the edges.
  2. Add Flour and Stir Vigorously: Once the mixture is boiling, remove the saucepan from the heat. Immediately add all the all-purpose flour to the saucepan. Using a wooden spoon or a sturdy spatula, stir vigorously and continuously until the dough comes together into a smooth ball and pulls away from the sides of the pan. This step is crucial for developing the right dough consistency. Don’t worry if it seems a bit sticky at first; keep stirring, and it will come together.
  3. Cool Slightly and Add Eggs: Let the dough cool slightly for about 5-10 minutes. This is important because you don’t want to cook the eggs when you add them. Once slightly cooled, crack one egg into the dough and stir until it is fully incorporated. Then, crack in the second egg and stir again until the dough is smooth and glossy. The dough should be soft and pipeable at this stage.
  4. Heat the Oil: While the dough is cooling slightly, prepare the oil for frying. Pour vegetable oil into a deep, heavy-bottomed pot or Dutch oven until it is about 2-3 inches deep. Heat the oil over medium-high heat until it reaches 350-375°F (175-190°C). Use a candy thermometer to ensure the oil is at the correct temperature. If you don’t have a thermometer, you can test the oil by dropping a small piece of dough into it; if it sizzles and browns in about 1-2 minutes, the oil is ready. Be careful not to overheat the oil, as it can burn the churro bites on the outside before they are cooked through inside.
  5. Pipe or Spoon the Dough: Transfer the churro dough into a piping bag fitted with a large star tip (like a Wilton 8B or similar). If you don’t have a piping bag, you can use a large zip-top bag with a corner snipped off, or even simply use two spoons to drop small dollops of dough into the hot oil. Piping will give you more uniform and traditional-looking bites, but spooning works just fine for a more rustic approach.
  6. Fry the Churro Bites: Carefully pipe or spoon small portions of dough (about 1-2 inches long) directly into the hot oil. Work in batches to avoid overcrowding the pot and lowering the oil temperature too much. Fry the churro bites for 2-3 minutes per side, or until they are golden brown and cooked through. Turn them occasionally to ensure even browning on all sides.
  7. Drain Excess Oil: Once the churro bites are golden brown, remove them from the oil using a slotted spoon or spider strainer and place them on a wire rack lined with paper towels to drain any excess oil. This step is important to prevent them from becoming soggy.
  8. Prepare Cinnamon Sugar Coating: While the churro bites are draining, prepare the cinnamon sugar coating. In a shallow dish or bowl, combine the granulated sugar and ground cinnamon. Mix well to ensure the cinnamon is evenly distributed throughout the sugar.
  9. Coat in Cinnamon Sugar: While the churro bites are still warm (this helps the cinnamon sugar stick), immediately toss them in the cinnamon sugar mixture, coating them generously on all sides. You can do this by adding a few churro bites at a time to the cinnamon sugar mixture and gently tossing to coat, or by placing the cinnamon sugar in a large zip-top bag and shaking the bites in the bag.
  10. Serve and Enjoy: Serve the churro bites immediately while they are still warm and crispy. They are best enjoyed fresh, but can be stored in an airtight container at room temperature for a day or two, although they are best eaten on the same day they are made for optimal texture. Consider serving them with dipping sauces like chocolate sauce, caramel sauce, or even a side of whipped cream for an extra indulgent treat.
