Cucumber & Smoked Salmon Bites

Ingredients

  • English Cucumber: 1 large. Also known as a hothouse or seedless cucumber, its thin skin and minimal seeds make it the perfect sturdy, crisp, and refreshing base for our bites.
  • Smoked Salmon: 4 ounces (about 115g), high-quality, cold-smoked. This is the star of the show. Look for silky, thinly sliced salmon (sometimes labeled as lox) for the best texture and flavor.
  • Cream Cheese: 8 ounces (1 full block, about 225g), softened to room temperature. Using full-fat cream cheese will give you the richest, creamiest texture. Softening it is key to a smooth, lump-free spread.
  • Fresh Dill: 2 tablespoons, finely chopped. The classic herbal partner to salmon. Its fresh, slightly anise-like flavor is essential and far superior to dried dill for this recipe.
  • Fresh Lemon: 1 medium. We’ll use both the zest and the juice to add a bright, acidic kick that cuts through the richness of the salmon and cream cheese.
  • Capers: 1 tablespoon, drained and roughly chopped. These little flower buds provide a wonderful briny, salty pop of flavor that elevates the entire appetizer.
  • Freshly Ground Black Pepper: ¼ teaspoon, or to taste. A simple seasoning to bring all the flavors together.
  • Optional Garnish: Extra sprigs of fresh dill, finely minced red onion or chives. These add a final touch of color and a subtle layer of sharp flavor.

Instructions

  1. Prepare the Cucumber Base: Wash and dry the English cucumber thoroughly. Since the skin is thin and edible, you can choose to leave it on for color and nutrients. For a more decorative look, you can use a fork to score the skin lengthwise, creating a striped pattern when sliced. Trim off the ends and slice the cucumber into rounds approximately ½-inch (about 1.25 cm) thick. You want them thick enough to be a sturdy base that won’t get flimsy or break when picked up. Arrange the cucumber slices in a single layer on a large platter or baking sheet. If you’re concerned about excess moisture, you can lightly pat the tops of the slices with a paper towel.
  2. Create the Dill Cream Cheese Spread: In a medium-sized bowl, combine the softened cream cheese, the 2 tablespoons of finely chopped fresh dill, the zest of one lemon, and 1 tablespoon of fresh lemon juice. Use a spatula or a hand mixer to blend everything until it’s completely smooth and creamy. It’s crucial that the cream cheese is at room temperature to avoid any lumps. Once smooth, fold in the chopped capers and the freshly ground black pepper. Give it a final stir to ensure everything is evenly distributed. Taste the spread and adjust seasoning if necessary—you might want a little more lemon juice for brightness or another grind of pepper.
  3. Assemble the Bites: Now for the fun part. You have two options for applying the cream cheese spread. For a quick and rustic look, simply use a small spoon or butter knife to place a dollop of the dill cream cheese mixture onto the center of each cucumber slice. For a more elegant, professional presentation, transfer the cream cheese mixture into a piping bag fitted with a star tip (like a Wilton 1M). Pipe a beautiful rosette of the cream cheese onto each cucumber slice.
  4. Add the Smoked Salmon: Take your slices of smoked salmon and cut or tear them into bite-sized pieces, roughly 1 to 2 inches long. Gently fold or roll each piece of salmon to give it a bit of height and dimension, making it look like a delicate rose. Carefully place one piece of folded salmon on top of the cream cheese on each cucumber slice. Press it down gently so it adheres.
  5. Garnish and Serve: For the final flourish, garnish your Cucumber & Smoked Salmon Bites. A tiny sprig of fresh dill on top of the salmon looks beautiful and adds an extra burst of aroma. Alternatively, a very light sprinkle of finely minced red onion or chives can add a pop of color and a subtle, sharp bite. Your appetizer is now ready to be served immediately for the best texture and flavor. If not serving right away, cover loosely with plastic wrap and refrigerate for up to an hour.
