Instructions

  1. Prepare the Toast: Begin by preparing the foundation of your dish. Lightly brush each side of the four slices of bread with extra virgin olive oil. This not only helps the bread to toast evenly but also adds a layer of rich flavor. You can toast the bread using your preferred method: in a toaster oven until golden and crisp, on a hot skillet or griddle for a few minutes per side, or under a broiler for a minute or two (watch it closely to prevent burning!). The goal is a sturdy, golden-brown slice that is crunchy on the outside but still has a slight softness in the center. Once toasted, set the bread aside on a wire rack to cool slightly.
  2. Mash the Chickpeas: While the bread is toasting, you can start on the star of the show. In a medium-sized mixing bowl, add the rinsed and drained chickpeas. Using a potato masher or the back of a fork, gently mash the chickpeas. You are not aiming for a smooth purée like hummus. The ideal texture is coarse and varied, with some chickpeas fully mashed, some partially broken, and a few left whole. This rustic texture is what gives the spread its delightful, substantial bite.
