  • 1/2 cup black beans: Rinsed and drained
  • 1/4 cup sliced jalapeños: Fresh or pickled
  • 1/4 cup diced tomatoes: Fresh or canned
  • 1/4 cup diced red onions: For a bit of crunch and flavor
  • 1/4 cup chopped cilantro: For garnish
  • 1/4 cup sour cream: For topping
  • 1 avocado: Sliced or diced for topping
  • 1 lime: Cut into wedges for serving

Instructions

Follow these steps to create your own Sweet Potato Nacho Rounds:

  1. Preheat the Oven:
    • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  2. Prepare the Sweet Potatoes:
    • Slice the sweet potatoes into 1/4-inch rounds and place them in a large bowl. Drizzle with olive oil, then sprinkle with salt, black pepper, and paprika. Toss until the slices are evenly coated.
  3. Roast the Sweet Potatoes:
    • Arrange the sweet potato slices in a single layer on the prepared baking sheet. Roast in the preheated oven for 20-25 minutes, flipping halfway through, until they are tender and slightly crispy.
  4. Assemble the Nacho Rounds:
    • Remove the sweet potato slices from the oven and let them cool slightly. Once cooled, arrange them on a large serving platter.
  5. Add the Toppings:
    • Sprinkle the shredded cheddar cheese evenly over the sweet potato rounds. Top with black beans, jalapeños, diced tomatoes, and red onions.
  6. Melt the Cheese:
    • Return the assembled nacho rounds to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  7. Garnish and Serve:
    • Remove from the oven and garnish with chopped cilantro. Add dollops of sour cream and slices of avocado over the top. Serve with lime wedges on the side.
