Ingredients

  • Cheddar Cheese: (Shredded, sharp or mild) – Provides a classic cheesy flavor and a beautiful golden crust when baked. Sharp cheddar adds a bolder taste, while mild is more kid-friendly.
  • Onion: (Diced) – Adds a subtle savory depth and aromatic base to the casserole. Yellow or white onions work best.
  • Garlic: (Minced) – Enhances the overall flavor profile with its pungent and aromatic notes. Freshly minced garlic is recommended for the best flavor.
  • Butter: (Unsalted) – Used to sauté the onion and garlic, adding richness and flavor. You can substitute with olive oil for a slightly lighter option.
  • Salt: (To taste) – Essential for seasoning and enhancing the flavors of all the ingredients.
  • Black Pepper: (Freshly ground, to taste) – Adds a subtle spice and depth of flavor. Freshly ground pepper is always preferred for its aroma.

Instructions

  1. Preheat Your Oven and Prepare Baking Dish: Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish. This ensures the casserole doesn’t stick and makes for easy cleanup. A glass or ceramic dish works well.
  2. Cook the Rice: If you are not using pre-cooked rice, cook the rice according to package directions. For most long-grain white rice, this typically involves boiling it in water or broth until tender and the liquid is absorbed. Set aside once cooked. If using brown rice, remember it takes longer to cook, so plan accordingly.
  3. Prepare the Broccoli: If using fresh broccoli, cut it into small, bite-sized florets. You can steam or blanch the broccoli florets for about 5 minutes until they are tender-crisp. This pre-cooking step helps to ensure the broccoli is perfectly cooked in the casserole and not too crunchy. If using frozen broccoli, thaw it slightly and drain any excess water. You can also quickly steam frozen broccoli if desired, but it’s often pre-cooked enough to be added directly.
  4. Sauté Onion and Garlic: Melt butter in a large skillet over medium heat. Add the diced onion and sauté until softened and translucent, about 5-7 minutes. Stir occasionally to prevent burning. Then, add the minced garlic and cook for another minute until fragrant, being careful not to burn the garlic as it can become bitter quickly. Sautéing the onion and garlic first releases their flavors and creates a flavorful base for the casserole.
  5. Combine Ingredients: In a large bowl, combine the cooked rice, cooked broccoli florets, cream of mushroom soup, milk, sautéed onion and garlic mixture, and half of the shredded cheddar cheese. Season with salt and pepper to taste. Mix everything together thoroughly until well combined. Ensure the soup and milk are evenly distributed to create a creamy consistency throughout the casserole.
  6. Transfer to Baking Dish: Pour the mixture into the prepared baking dish and spread it out evenly. Level the surface for even baking and presentation.
  7. Top with Cheese: Sprinkle the remaining shredded cheddar cheese evenly over the top of the casserole. This creates a delicious cheesy crust when baked. If desired, sprinkle a little paprika over the cheese for color and a hint of flavor.
  8. Bake the Casserole: Bake in the preheated oven for 25-30 minutes, or until the casserole is heated through, bubbly, and the cheese is melted and golden brown. The edges should be slightly browned and the center should be hot.
