Chocolate Peanut Clusters

  • Author: Jessica

Ingredients

This recipe is wonderfully simple, requiring just a handful of readily available ingredients. The beauty lies in the quality of your ingredients; using good chocolate and fresh peanuts makes all the difference in the final taste and texture. Here’s what you’ll need:

  • Chocolate Chips (2 cups): Choose your favorite type! Semi-sweet chocolate chips are classic and provide a balanced sweetness, but you can also use milk chocolate for a sweeter treat, dark chocolate for a richer flavor, or even a combination for added depth. Good quality chocolate chips melt smoothly and contribute significantly to the overall flavor.
  • Peanuts (2 cups): Roasted and salted peanuts are the traditional choice for peanut clusters. The roasting enhances their nutty flavor, and the saltiness perfectly complements the sweetness of the chocolate. You can use dry roasted or oil roasted peanuts, depending on your preference. Make sure they are shelled and ready to go.
  • Vanilla Extract (1 teaspoon): A touch of vanilla extract enhances the sweetness and depth of flavor in the chocolate. Pure vanilla extract is recommended for the best taste, but imitation vanilla can also be used in a pinch.
  • Sea Salt (Pinch, optional): A sprinkle of sea salt flakes on top of the finished clusters is entirely optional, but highly recommended. It elevates the flavor profile by contrasting the sweetness and adding a delightful savory note.

Instructions

Making Chocolate Peanut Clusters is incredibly straightforward. No fancy equipment or complicated techniques are required. Follow these simple steps, and you’ll have a batch of delectable treats ready in no time!

  1. Prepare Your Workspace: Line a baking sheet with parchment paper or wax paper. This will prevent the clusters from sticking and make cleanup a breeze. Set aside the baking sheet near your workspace.
  2. Melt the Chocolate: There are two main methods for melting chocolate: the microwave method and the double boiler method.
    • Microwave Method: Place the chocolate chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring after each interval, until the chocolate is almost completely melted. Be careful not to overheat the chocolate, as it can burn. Once it’s mostly melted, continue stirring until the remaining chocolate chips melt from the residual heat and the chocolate is smooth and glossy.
    • Double Boiler Method: Fill a saucepan with about an inch of water and bring it to a simmer. Place a heatproof bowl (glass or stainless steel) on top of the saucepan, ensuring the bottom of the bowl does not touch the water. Add the chocolate chips to the bowl. The steam from the simmering water will gently melt the chocolate. Stir occasionally until the chocolate is completely melted and smooth.
  3. Incorporate Vanilla Extract: Once the chocolate is melted and smooth, remove it from the heat (or microwave). Stir in the vanilla extract until it is fully incorporated into the melted chocolate. This will add a subtle layer of flavor that enhances the overall taste.
  4. Add the Peanuts: Pour the roasted and salted peanuts into the melted chocolate. Using a spatula or spoon, gently fold the peanuts into the chocolate, ensuring they are evenly coated. Mix until all the peanuts are well dispersed and covered in the chocolate mixture.
  5. Form the Clusters: Using a spoon or a small cookie scoop, drop spoonfuls of the chocolate-peanut mixture onto the prepared baking sheet. You can make them any size you like – small bite-sized clusters or larger, more substantial ones. Aim for relatively uniform sizes for even setting.
  6. Chill to Set: Place the baking sheet with the peanut clusters in the refrigerator to allow the chocolate to set and harden. This usually takes about 20-30 minutes, but it can vary depending on the thickness of your clusters and the temperature of your refrigerator. You can also speed up the process by placing them in the freezer for about 10-15 minutes.
  7. Optional Salt Sprinkle: Before the chocolate fully sets (but after they are in the refrigerator for a few minutes and starting to firm up), if desired, sprinkle a pinch of sea salt flakes over the top of each cluster. The salt will adhere to the slightly softened chocolate.
  8. Enjoy!: Once the chocolate is completely set and firm, remove the Chocolate Peanut Clusters from the baking sheet. They are now ready to be enjoyed! Store them in an airtight container at room temperature or in the refrigerator for longer storage.
