Instructions

Preparing the Shrimp

  1. Boil the Shrimp: Fill a large pot with water, add a pinch of salt, and bring it to a boil. Add the shrimp and cook for 2-3 minutes until they turn pink and opaque.
  2. Cool the Shrimp: Immediately transfer the shrimp to a bowl of ice water to stop the cooking process. Let them chill for about 5 minutes.
  3. Dry the Shrimp: Remove the shrimp from the ice bath and gently pat them dry with a paper towel.
  4. Season the Shrimp: In a large bowl, combine the shrimp with olive oil, salt, black pepper, and lemon juice. Toss to coat them evenly.

Making the Pineapple Sauce

  1. Blend the Ingredients: In a blender, combine the pineapple chunks, honey, lime juice, soy sauce, grated ginger, and minced garlic. Blend until smooth.
  2. Adjust Seasoning: Taste the sauce and adjust the seasoning as needed. If you enjoy a spicier sauce, add a pinch of red pepper flakes.
  3. Chill the Sauce: Transfer the sauce to a bowl and refrigerate for at least 30 minutes before serving to enhance the flavors.
