Beef and Vegetable Skewers

  • Author: Jessica

Ingredients

  • Beef Cubes: Choose a tender cut like sirloin, ribeye, or tenderloin, cut into bite-sized cubes. Provides the protein base and hearty flavor.
  • Bell Peppers: Select a variety of colors like red, yellow, and green for visual appeal and diverse flavors. Adds sweetness and a slight crunch.
  • Onions: Red or yellow onions, cut into wedges. Offers a pungent and slightly sweet flavor that caramelizes beautifully on the grill.
  • Zucchini: Cut into thick slices or chunks. Provides a mild, slightly sweet flavor and tender texture when grilled.
  • Cherry Tomatoes: Use whole or halved, depending on size. Adds bursts of juicy sweetness and vibrant color.
  • Mushrooms: Cremini or button mushrooms, whole or halved. Earthy flavor and meaty texture complement the beef.
  • Olive Oil: Extra virgin olive oil is preferred. Forms the base of the marinade and helps to keep the skewers moist.
  • Soy Sauce: Low sodium soy sauce is recommended. Adds umami and saltiness to the marinade.
  • Garlic: Freshly minced garlic cloves. Provides a pungent and aromatic flavor.
  • Lemon Juice: Freshly squeezed lemon juice. Adds brightness and acidity to balance the flavors.
  • Dried Herbs: Italian seasoning, oregano, thyme, or rosemary work well. Adds depth and aromatic complexity to the marinade.
  • Salt and Black Pepper: To taste. Enhances all the flavors and seasons the skewers perfectly.

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together olive oil, soy sauce, minced garlic, lemon juice, dried herbs, salt, and black pepper. Ensure all ingredients are well combined to create a flavorful marinade.
  2. Marinate the Beef: Place the beef cubes in a resealable plastic bag or a shallow dish. Pour the marinade over the beef, ensuring all pieces are coated. Marinate in the refrigerator for at least 30 minutes, or up to 4 hours for maximum flavor infusion. Longer marinating times will result in more tender and flavorful beef.
  3. Prepare the Vegetables: While the beef is marinating, wash and chop all the vegetables into bite-sized pieces that are roughly the same size as the beef cubes. This ensures even cooking on the skewers. If using wooden skewers, soak them in water for at least 30 minutes to prevent them from burning on the grill.
  4. Assemble the Skewers: Preheat your grill to medium-high heat. Thread the marinated beef and vegetables onto skewers, alternating between beef and different vegetables. You can arrange them in any order you like, but try to keep a variety of colors and textures on each skewer for visual appeal and balanced flavors. Don’t overcrowd the skewers; leave a little space between the pieces for even cooking.
  5. Grill the Skewers: Lightly oil the grill grates to prevent sticking. Place the skewers on the preheated grill and cook for about 8-12 minutes, turning them occasionally, until the beef is cooked through and the vegetables are tender-crisp and slightly charred. The exact cooking time will depend on the heat of your grill and the size of the beef and vegetable pieces. Use a meat thermometer to ensure the beef reaches an internal temperature of 145°F (63°C) for medium-rare or 160°F (71°C) for medium.
  6. Rest and Serve: Once cooked, remove the skewers from the grill and let them rest for a few minutes before serving. This allows the juices to redistribute, resulting in more tender and flavorful beef. Serve immediately and enjoy!
